Seminars and Cooking Demonstrations

We want to ensure you receive the best in education during The Great Gluten Free Expo! Below is the speaker’s schedule, followed by introductions of all our speakers.

Please limit ages 0-6. **Be very specific on the times you are requesting, please try to keep to a 2 hour limit, space is limited**

10-10:45am: Judy Jones with the Autism Society! Judy and other experts will discuss the role gluten and other food sensitivities play in the Autism Spectrum. This will be in the upstairs lecture hall.

10:45-11:45am: Dr. Alessio Fasano, of the Center for Celiac Research! Dr. Fasano will share his insights from the past 15 years of Celiac research. DO NOT MISS THIS TALK! Dr. Fasano will speak in the first floor classroom. Overflow and video feed available in upstairs classroom. CMEs and CEUs are applied for Physicians and Nurses!

11:30am-1pm: Jules Shepard of Jules Gluten Free! Want to learn about the art and science of gluten free baking? Come meet Jules for a thorough cooking demo. Jules will be in the first floor cooking demo room. For those attending Dr. Fasano’s talk, feel free to arrive at Jules’ talk after 11:45 for there will still be plenty of time to learn great baking tips!

12:30-1:30pm: Gluten Free GiGi! GiGi will tell you all about living gluten free AND maintaining your weight! GiGi’s informative and entertaining talk will be in the first floor classroom.

1-2pm: Chef Sean Butler of Food Studio B!! Also our wonderful chef for the Gluten Free Gala, Chef Sean know all about cooking fresh, organic, paleo, gluten free, and everything in between. Learn practical tips about feeding your family! First floor cooking demo room.

1:45-2:30pm: Naomi Poe of Better Batter! Everyone loves Better Batter gluten free pancakes. Naomi is passionate about helping families learn how to live gluten free, especially when it comes to educating other family members. First floor classroom.

2:15-3pm: Chef Joesph Mitchell of the Jeff State Culinary Institute! Chef Joseph will demonstrate how to make an amazing Gluten Free Red Velvet Cake! Do not miss Chef Mitchell in the demo kitchen!

3-4pm: Jules Shepard of Jules Gluten Free! Jules is a leader in food labeling legislation and has a talk about food labeling laws and being a savvy shopper that you do not want to miss. First floor classroom.

Dr. Alessio Fasano! World-renowned pediatric gastroenterologist, research scientist and entreprenuer Alessio Fasano, M.D., founded the University of Maryland Center for Celiac Research in 1996. The Center for Celiac Research offers state-of-the art research, teaching and clinical expertise for the diagnosis, treatment and prevention of gluten-related disorders, including celiac disease, wheat allergy and gluten sensitivity. Dr. Fasano is our keynote speaker for the Gala Dinner and will teach one class at the expo! For more information about Dr. Fasano, click HERE.

Jules Shepard of Jules Gluten Free!!In addition to heading product and recipe development at Jules Gluten Free, Jules travels the country speaking to thousands of people annually, teaching cooking classes and educating and inspiring people about her no-compromise approach to living gluten-free. She also has written three books: Nearly Normal Cooking for Gluten-Free Eating; The First Year: Celiac Disease and Living Gluten Free; and Free For All Cooking: 150 Easy Gluten-Free, Allergy-Friendly Recipes the Whole Family Can Enjoy!

Jules will conduct a cooking demo about Gluten Free baking and also teach a seminar about product labeling and being a savvy GF consumer!

 

Chef Sean Butler of Foods Studio B and Maria's Good Food/Smart Food!

At an early age, Chef Sean was inspired by his Austrian grandmother, "Omi",  and Eastern European chefs and learned the classical techniques of utilizing farm fresh food and scratch cooking. After coming to America, Sean sought opportunities to learn from top chefs and was quickly awarded a head chef position at a Jackson Hole, Wyoming, restaurant, at only twenty. By the time his son, Brayden, was born, Sean had eight years of executive chef experience and knew the time was right to create Food Studio B here in the Birmingham area.

Specializing in fresh, natural, and organic foods, Food Studio B has a cafe in Chelsea, AL, a full catering service, and even offers home meals! His new line of healthy snack foods are delicious for people of all ages. Click HERE for more information.

Gluten Free Gigi!

Gigi Stewart, "Gluten Free Gigi", has been completely gluten free for medical reasons for over four years. Gigi selectively provides private consultations and holds a master's degree in Behavioral Neuroscience with a focus in chronic pain. Also an award-winning recipe developer, Gigi has created special recipes for gluten free breads (sandwich bread, hamburger buns, cornbread, biscuits, pancakes and muffins), desserts (layer cakes, dairy free ice cream, brownies, and cookies), and numerous other popular dishes.

Gigi is a firm believer in diet as a way to manage and improve our health. She knows many others face health challenges similar to those she overcame and how removing gluten from ones diet can be life-changing.

To share her knowledge and experience more widely, Gigi created GlutenFreeGigi.com. Through her website she covers, weekly, the latest research on eating gluten free, nutrition, and special diet insights. She also publishes new gluten free recipes accompanied by her unique and complete How-To videos each week.  Gigi regularly motivates, inspires and informs crowds with her message at conferences and events.
